In recognition of Indonesia’s Independence Month, Antarasa Tribeca names culinary veteran Arcad Fadillah as Partner and Chef, with Chef Juna Rorimpandey passing the torch and unveiling a bold new menu of signature dishes.

In recognition of Indonesia’s Independence Month, Antarasa—the acclaimed elevated Indonesian dining destination founded by MasterChef icon Chef Juna Rorimpandey—enters a bold new chapter with the appointment of local culinary veteran Arcad Fadillah as the Partner and Chef of Antarasa Tribeca.
The announcement was made during an exclusive media gathering held at the Central Park Mall location, marking both an official leadership handover and the unveiling of Antarasa’s revitalized signature menu.
The event drew a curated guest list of lifestyle journalists, culinary content creators, and media partners for a special morning showcase. Chefs Juna and Arcad delighted attendees with a live cooking demonstration followed by an intimate Q&A, sharing insights into their creative process and culinary philosophies.
Since its 2022 inception, Antarasa has championed a modern Indonesian culinary narrative—one that respects tradition while appealing to the tastes and aspirations of the country’s growing middle class. With locations in Central Park Tribeca, One Satrio in Kuningan, and Grand Kota Bintang in Bekasi, Antarasa has become a go-to destination for refined Indonesian cuisine in stylish, accessible settings.
The Tribeca flagship venue now steps into a new era with Chef Arcad at the helm—an industry pioneer whose experience includes culinary leadership roles at The Fairmont, Westin, and Park Hyatt. In addition to taking over the kitchen, Arcad also joins as a co-owner alongside Chef Juna, working together to expand the brand’s impact and culinary vision.

At the core of Antarasa’s evolution is a menu reimagined from the ground up, featuring dishes that embody the richness of Indonesia’s regional flavors with a contemporary flair. Among the highlights is the Iga Bakar Maranggi—a slow-grilled short rib marinated to tender perfection, served with sweet soy sambal and fresh lalapan vegetables, delivering a comforting yet refined take on a West Javanese classic.
The Ikan Bakar Kunyit Asap showcases local king cobia kissed with smoke and turmeric butter, balanced by a zesty sambal dabu-dabu that brings brightness and fire to every bite. Another standout is the Nasi Daun Jeruk Nusantara—fragrant coconut rice infused with the bright aroma of kaffir lime leaves, served with an array of regional accompaniments that celebrate the diverse flavors of the Indonesian archipelago.
New signature creations by Chef Juna Rorimpandey include Lumpia Bebek Asap, crispy spring rolls filled with tender smoked duck and served with a refreshing house-made dipping sauce; Rahang Tuna Dabu-Dabu, grilled tuna collar, juicy and rich, paired with tangy green sambal and a spritz of lime for balance; and Iga Konro Bakar, succulent beef short ribs marinated in aromatic Makassar spices, slow-cooked until tender, then finished over an open flame for a smoky, charred depth, served with a rich, nutty black pepper sauce.
For spice lovers, the Ayam Panggang Rembiga brings fiery Lombok heat to grilled chicken, while the Daging Sapi Rendang Hitam reinterprets Indonesia’s classic rendang using grilled picanha, bathed in a velvety black rendang sauce and finished with garlic chips and grilled cuciwis.
Traditional side dishes like Kerang Bakar Rica—fresh clams grilled to perfection and tossed in a vibrant North Sulawesi–style chili sauce—alongside Kalasan-style grilled corn with chili butter and stir-fried pumpkin shoots round out the experience, while dessert lovers can indulge in Antarasa’s decadent durian sundae—a bold finale that’s as indulgent as it is iconic.
